Delicious Turkey and Vegetable Casserole
Ingredients for Turkey Meatballs
2x 500g Turkey Thigh mince 7% fat
Splash of brandy
1/2 tsp Baking Powder
Additional Ingredients needed for the Casserole
1 Tomato can
1tbsp Tomato Puree
1 Vegetable Stock
1 Garlic Clove
1/2 cup hot water
In a large bowl, mix together the turkey mince, onion, parsley, chilli, basil, oregano, baking powder, clove powder, breadcrumbs, brandy and egg yolk with a little salt and pepper. Combine well with your hands, then shape into 40 small meatballs.
Cook on a griddle pan for 2 minutes on each side until it has browned a little.
Making the rest of the Casserole
Add the potatoes, courgettes, aubergine and cauliflower in an oven dish.
In a pan fry the onion and garlic with some oil. Add in the tomato puree and canned tomato let it simmer then add the vegetable stock with a 1/2 cup of boiling water.
Once that has cooked pour it over the vegetables in the oven dish.
Cook this for about 1 hour- 1hour 15 mins in a medium heat oven.
Then add in the turkey meatballs and let it cook for another 15 minutes.
