Lentil and Mixed Vegetable Casserole



Lentils are a super nutritious ingredient, they are high in protein, fibre, folate, iron, manganese, phosphorous, thiamin, potassium and vitamin B6.

Not only is it easy to cook lentils, they also add substance and flavour to both meat and vegetable dishes. So, if you are looking for lentil recipe, try out this warm, hearty and satisfying dish.




For Lentils

1 cup Green Lentils

1 Onion (finely cut into small pieces)

1 Garlic clove

1/3 cup Olive Oil

1/3 cup Rice

1/3 Cup Coconut Milk

Vegetable Stock

Ground Black Pepper



For Vegetables

3 Aubergines

Mixed Peppers

1 Onion

Ground Cumin

Ground Cinnamon

Ground Black Pepper



  1. In a saucepan pour in the green lentils, add 2 cups of cold water and let it cook until it softens.
  2. While cooking lentils, often a grey foam will accumulate over the cooking water. Skim this off regularly while cooking until there is nothing left to skim.
  3. As the lentils are cooking, in an oven dish add the aubergine, mixed peppers and onion. Season with ground cumin, ground cinnamon and ground black pepper.
  4. Add in the finely cut onion, garlic, olive oil, coconut milk and vegetable stock.
  5. Once the onion softens and cooks add in the rice
  6. Add the black pepper and salt. Do not add it until after the lentils are cooked and removed from the heat as it can toughen the lentils if added during the cooking process.
  7. Once the lentils and vegetables are cooked combine them both in the oven dish, to make a wholesome and healthy meal.

Cooking time 40 minutes
